Breadmaking is an ancient art that combines just three basic ingredients—flour, water, and salt. Through fermentation, these simple elements are transformed into food that is both nourishing and sublime.
The foundation of our bread offerings has always been, and will always remain, a natural wild yeast culture. This means that nearly all of our loaves fall under the category of what is commonly known as ‘sourdough,’ but without the strong acidity often associated with traditional sourdough bread. To complement these options, we also offer a selection of breads made with baker’s yeast. These have a milder flavor, making them ideal for classic burger buns and airy focaccia flatbreads.

About Our Bread
There are 9 breads that are made each time we bake. In addition to our “all the time” breads, we also make two specialty breads each week on rotation. These specialty loaves like Cinnamon Raisin and Onion Parmesan are supremely popular, but be sure to sign up for our monthly Newsletter so that you know when your favorite is on deck.
While they are turned into several different shapes and sized loaves, making it easy to assume we make, our everyday breads are:

- Whole Wheat
- French
- Sunny Flax
- 5. Olive Rosemary
- Homestyle Multigrain
- Seeded Deli Rye
- Farmhouse white
- Focaccia
We can only slice breads that are baked in a pan. The reason for this is that round and oval loaves tend to get tangled in the blades while passing through the slicer. None of our 100% whole grain loaves can successfully be sliced by machine.
Almost all of our breads are made with a wild yeast culture, one of the many benefits of which is extending the shelf life by several days. Kept out of direct sunlight, our breads will make good toast for up to a week or more. Our homestyle breads, which are made with baker’s yeast, have a shorter shelf life. Please don’t refrigerate the bread.

In all honesty, since there are several of us here, each of us has different favorites, but an overarching simple truth about good bread is that it’s a reflection of the baker’s ability to coax flavor from fermented grain. Just like the best wine, beer, cheese or chocolate isn’t about the added flavorings, it’s a result of a full understanding of the essential ingredients, which for bread are: flour, water and salt. Our creativity results in a wide array of breads, but they’re all built on the same foundation that lies at the heart of the baking craft.
